T-Bone Steak With Gorgonzola Cheese Sauce

Steak and cheese might sound like something out of a keto diet cookbook, but the combo certainly works for the Thermo Diet too. Perfect for grilling, T-bone steaks are actually even more tender than their sirloin or rib-eye counterparts.

That big “T” bone actually separates two separate types of steak — tenderloin steak and top loin — which is where the name comes from. And when grilled to perfection and topped with a delightful cream sauce like this rich gorgonzola cheese sauce, you’ve got a meal fit for a king.

T-bone steak — and other cuts of beef — are also packed with all sorts of nutrients, including calcium, iron, magnesium, phosphorus, potassium, zinc and copper.

While a ton of cheese isn’t necessarily recommended, it works just fine in moderate doses. In fact, gorgonzola cheese is loaded with all sorts of goodies, including calcium and protein. It’s also got a reasonable amount of vitamin A, vitamin B12, riboflavin, zinc and phosphorus. Not only that, but it’s a decent source of conjugated linoleic acid (CLA), an important fat that may be able to protect the heart and even help with weight management.

T-Bone Steak With Gorgonzola Cheese Sauce

Steak and cheese? Yes please!

  • 1 each 16-oz T-bone steak
  • salt and pepper
  • 1 tbsp coconut oil

Gorgonzola Cheese Sauce

  • 2 tbsp unsalted grass-fed butter
  • 1 each large yellow onion, sliced thin
  • 1 each garlic clove
  • 1 cup heavy cream
  • ½ cup crumbled gorgonzola cheese
  • salt and pepper
  1. To prep the steaks, take them out of the fridge about 30 minutes before cooking. 

  2. To prep, rinse and pat steaks dry on both sides and season well with salt and pepper. 

  3. Preheat oven to 450°. Heat coconut oil in a large oven-safe skillet on high heat. When pan is hot, gently place the steak into the pan using tongs and sear for about 4 minutes on both sides. 

  4. Once both sides are seared place pan into preheated oven and cook for an additional 6-8 minutes or to an internal temp of 140 (medium-rare), or cook to your level of doneness.

  5. Remove steak when done cooking and place onto a cutting board and let rest for a few minutes.

Gorgonzola Cheese Sauce

  1. In a large skillet heat 2 tbsp of butter on medium heat. Once butter is melted, add sliced onions to the skillet and toss to coat in butter

  2. Cook onions on medium for a totally of 20 minutes, stirring every few minutes to prevent burning. 

  3. Once onions are caramelized and golden in color reduce heat to a simmer and pour in heavy cream, 1 garlic clove and season with salt and pepper. Stir well. 

  4. Cook at a simmer for 3-5 minutes; cream will cook down and thicken a bit. 

  5. Add crumbled cheese and stir until completely melted.
